For the functionality, texture, and flavor, garlic has been considered as an important additive in cheese. In this paper, skim milk-based cheese is prepared by incorporating different loadings of garlic paste (0%, 1%, 3%, and 5%) and the influence of garlic paste on the physicochemical qualities of the cheeses is investigated.
